Nabilt Alvarez and Eloise Cobos
Nabilt Alvarez first had the idea of making gelato after a visit to Italy. She fell in love with the incredible rich and dense flavor of the italian ice cream! She immediately began her research, and decided to go back to Italy and attend the month long Carpigiani Gelato University where she learned all the artisan techniques of gelato making. From there, she returned to Texas with the dream of opening her shop with her very own gelato recipes!
Eloise Cobos developed her love for gelato very early on. She got her first job at 16 years old as a server in a gelato shop in New Caledonia, a French Island she grew up on. She later found her way to Texas, just like Nabilt, and by luck, the two ladies met and decided to move forward with this exciting business idea.
